Mini Chocolate Egg Brownies

Nothing says chocolate like a good decent brownie, but make them Easter edition by layering mini chocolate eggs on top and give them the best texture with an extra chew by adding marshmallows. The combination of marshmallows and chocolate eggs will definitely be too tempting not to eat and will definitely get you in the Easter spirit.

To make this recipe you will need:

  • 2 sticks unsalted butter
  • 1 ⅓ cups chocolate chips
  • 4 large eggs room temp
  • 2 cups sugar
  • ¾ teaspoon salt
  • 1 ½ teaspoons vanilla extract
  • ¾ cup flour
  • 1 cup cocoa powder
  • 10oz miniature marshmallows
  • ½ cup chocolate chips
  • 1 bag of small milk chocolate eggs of your choice

In order to make these delicious brownies, you should firstly preheat the oven to 180°C and prepare a square baking tin and line it with greaseproof paper.

Melt butter in a pan over low heat and add the chocolate chips and whisk until melted. Once melted, turn off the heat and set aside.

Beat eggs lightly into a bowl and then add the sugar and salt and mix until combined. Then whisk in the melted chocolate and butter mixture and add the vanilla extract. After this, sift in the flour and cocoa powder and mix well.

Once these steps are complete pour the batter into the prepared tan and spread evenly and bake for 25 minutes.

Remove from the oven and sprinkle the marshmallows over the top of the brownies and bake for an extra 6 minutes. Once this is complete collect up your small chocolate eggs and scatter them over the top to create another layer. After all your hard work is done, transfer to a cooling rack to cool down completely.

Daisy Pretzel Bites

For the ultimate easy peasy Easter treat and snack, try these springtime daisy pretzel bites.
To make these cute and tasty treats all you need is pretzels of any kind, some white chocolate for melting and some colourful candy-coated buttons – M&Ms or Smarties work great and I like to go for pastel colours as I think they give the cutest look for spring.

All you need to do to achieve this is to lay your pretzels out flat and melt your white chocolate. Pop a blob of chocolate on each pretzel and then gently press an M&M or Smartie onto the centre of the pretzel and then add 6 around the outside of the centrepiece to form the petals – and therefore you will have a complete daisy!
Place into the fridge to set and voila, your super quick and easy spring daisies are complete and ready to taste.

Bunny Tangerines

Want something a bit healthier to mix in with all the naughty treats? Perhaps you need a fun way to get your kids to eat a bit healthier and distract them from all the chocolate and cake at this time of year.

If so, some bunny ears and tail stuck onto some easy peeler tangerines is all you need for this decorative cute fruit design.

Get some white and pink coloured card, a glue stick and some small white and pink pom-poms and some scissors to cut out the ears.

Cut yourself some bunny ears and a rectangle for whiskers from your card, glue the pink inner ears to the white outer ears and cut 2 small slits into the peel of the tangerine where you can insert your card.

Cut along each side of your rectangle whiskers to create a fringing effect and glue to the front of the tangerine. Once this is done you can finish off by glueing a white pompom tail to the back of the tangerine and a pink pompom to the centre of the whiskers for a cute little pink bunny nose, and that is it, as simple as that!
